Chutney plays a vital role in a desi (Indian and Pakistani) Cuisine.  It is made with Spices, Herbs, Vegetables and Fruits.

  1. How to make Green  Mint Chutney Recipe

Green Mint Chutney Recipe

INGREDIENTS:-

  • Green Chillies= 6-7
  • Coriander Leaves= ½ cup chopped
  • Mint Leaves= 1 cup chopped
  • Garlic Cloves= 5-7
  • Lemon Juice (optional)= 2-3 tbsp
  • Tamarind Water= 1/3 cup
  • Salt= to taste

           METHOD:-

Add all the ingredients in the blender except Salt and Lemon Juice. Blend well to form a smooth paste. Pour in a small bowl. Add Salt and Lemon Juice.

INGREDIENTS:-

  • Red Chillies (big) = 8-10
  • Cumin Seeds= 2 tsp
  • Garlic Cloves= 5-7
  • Lemon Juice (optional)= 2-3 tbsp
  • Tamarind Water= 1/3 cup
  • Salt= to taste

  METHOD:-

Soak Red Chillies in water for 3-4 hours. Then, add all the ingredients in the blender except Salt and Lemon Juice. Blend well to form a smooth paste. Pour in a small bowl. Add Salt and Lemon Juice.

INGREDIENTS:-

  • Plums (fresh)= 1 kg (cut into wedges)
  • Apples= 400 grams (peeled and chopped)
  • Mustard Seeds= 2 tsp
  • Garlic Cloves= 2 (crushed)
  • Ginger= 2 tsp (freshly grated)
  • Onion= 200 grams (sliced)
  • Cardamom= 1 tsp (grounded)
  • Brown Sugar= 400 grams
  • Vinegar= 430 grams
  • Butter= 75 grams

  METHOD:-

Take a saucepan and heat Butter in it. Add Ginger and Garlic and cook for a minute on a medium flame. Then add Cardamom Powder and Mustard Seeds. Stir for two minutes and add Onion Slices. Stir and Cook till the Onions becomes soft. On high flame, add rest of the ingredients in it. Cook till the Brown Sugar is dissolved then lower the flame. Let the mixture simmer till it turns like Jam (thickens to jam-like consistency). Let it Cool. Then pout this mixture in a sterilized container with a lid. Refrigerate and serve chill.

INGREDIENTS:-

  • Chickpea Flour or Besan= 1 cup
  • Green Chillies= 8-9 (finely chopped)
  • Mustard Seeds= ½ tsp
  • Turmeric Powder= ¼ tsp
  • Ginger= 1 tsp (finely chopped)
  • Water= 3 cups
  • Oil= 1 tbsp
  • Salt= to taste
  • Coriander Leaves= for garnishing

  METHOD:-

Take a bowl and add Turmeric Powder, Chickpea Flour(Besan), Salt and Water. Mix well to form a smooth paste.

Heat Oil in a Pan and add Mustard Seeds. Cook for 2 minutes then add Ginger, Green Chillies and Chickpea (Besan) mixture. Keep stirring for 3-4 minutes on low flame till the mixture thickens. Garnish with chopped Coriander Leaves. You can serve this Besan ki Chutney with Chapati as well.

INGREDIENTS:-

  • All Spices Powder= 2 grams
  • Onions= 500 grams (finely chopped)
  • Garlic= 500 grams (finely chopped)
  • Vinegar= 80 grams
  • Butter= 5 grams
  • Brown Sugar= 20 grams
  • Black Pepper= to taste
  • Salt= to taste

 

  METHOD:-

Take a pan and heat Butter and add Onions, Garlic and All Spices Powder. Cook until the Onions turn golden-brown. Then add Brown Sugar. Cover the pan with a lid and cook on a low flame for 45-50 minutes. Stir occasionally. Then add Vinegar and cook for 5 minutes more before adding Salt and Black Pepper. Remove the pan from the stove and let it cool. Pour this in an air-tight sterilized jar and cover it with a lid. Refrigerate.

 

 

  1. How to make Coconut Chutney Recipe

INGREDIENTS:-

  • Coconut= 100 grams (grated)
  • Green Chillies= 15 grams
  • Mint Leaves= 25 grams (finely chopped)
  • Coriander Leaves= 125 grams (finely chopped)
  • Garlic= 10 grams(finely chopped)
  • Onions= 30 grams (finely chopped)
  • Cumin Powder= 2 grams
  • Sugar= 5 grams
  • Tamarind Water= 25 ml
  • Lemon Juice= 25 ml
  • Water= 100 ml
  • Salt= to taste

 

  METHOD:-

Take all the ingredients (except Salt and Lemon Juice) in a blender and blend well to form a smooth paste. Add Salt and Lemon Juice. Mix well. Now, Pour and Store in an air-tight Jars or Containers with lids. Refrigerate and serve Chill.
