* Mutton= 1 ½ kg boneless
* Tomatoes= 10
* Coriander leaves= 1 cup (very thinly chopped)
* Green Chillies= 10- 12
* Ginger/ Garlic Paste= 2 tbsp
* Fenugreek leaves (dried)= 1-2 tbsp
* Cumin Seeds= 1-2 tbsp
* Red Chilli Powder= 1 tbsp
* All Spices Powder= 1 tbsp
* Salt= to taste
* Shan Karahi Fry Gosht Masla= 2 tbsp (optional to improve taste)
* Lemon= 1-2 thinly slices in circles (to garnish)
* Ginger= 1 (thinly vertically and finely chopped)
* Oil= 5-7 tbsp
METHOD
Take a Wok or a deep pan. Add Oil and Ginger/ Garlic Paste on a medium flame.
Stir for a minute.
Then add boneless Mutton.
Peel off the Tomatoes in a separate bowl and chop them into very fine and small pieces.
When you find that the Mutton is half cooked, add chopped Tomatoes in them on a high flame. Mix them with the help of a spoon.
Mix for 2-3 minutes then add Salt, Red Chilli Powder, and All Spices Powder. Let this cook for 2-3 minutes.
Then add Shan Karahi Fry Gosht masala.
When the mutton gets tender, and the tomatoes have turned into paste form, slow down the heat to low flame.
Take half of the Coriander leaves and half of the Green Chillies and add them in the pan oor Wok. Mix well.
Cook for 2-3 minutes.
The Sprinkle dried Fenugreek leaves and let this cook for one more minute before turning off the stove.
Garnish with the remaining Green chillies, Coriander Leaves, sliced Lemons and Ginger.
Serve hot and enjoy
