How To Cook Spicy Bombay Biryani / Sindhi Biryani Recipe

INGREDIENTS:-

  • Rice= 2 kg or 3 ½ Cup
  • Chicken or Mutton= 1 kg
  • Onions= 1 large (Chopped finely)
  • Lemon= 2 (cut into thin slices or in 4 pieces)
  • Coriander Leaves= 1 Cup
  • Tomatoes= 3-4 (chopped finely), 3-4 (sliced finely)
  • Green Chillies= 8-10
  • Ginger/ Garlic Paste= 2 tbsp
  • Yogurt= 1 ½ -2 cups
  • Red Chilli Flakes= 2- 3 tbsp
  • Turmeric Powder= 1-2 tbsp
  • All Spices Powder= 2 tbsp
  • Salt= as required
  • Bombay Biryani Masala/ Sindhi Biryani Masala (up to your choice)= 4 tbsp
  • Oil= 3-4 tbsp
  • Water= as required

 

PREPARATION:-

For Marination= 60-70 minutes

For Chicken Biryani= 20-30 minutes

For Mutton/ Beef Biryani= 50-60 minutes

Serves= 5-6 people

 

METHOD:-

Take a deep bowl and add Chicken/ Beef/ Mutton, Yogurt, Red Chilli Flakes, Turmeric Powder, All Spices Powder and Salt. Mix this with a Fork. Pierce this mixture in such a way that the mixture would penetrate inside the Chicken/ Mutton/ Beef. Let this mixture marinate for 60-70 minutes.

Take a different bowl and soak Rice in Water for 45-50 minutes.

Take a Wok or a deep pan. On a medium flame, add Oil and then chopped Onions. Fry till the Onions turn golden- brown.

Now add Ginger/ Garlic Paste .Stir this for a minute or so then add 2 tbsp of Bombay Biryani Masala/ Sindhi Biryani Masala (up to your choice). Stir for a minute.

Then add the marinated Chicken/Beef/ Mutton with the marinated mixture.

Fry this till the Chicken/Beef/ Mutton is half tender. Then add the remaining Bombay Biryani Masala/ Sindhi Biryani Masala (up to your choice). Fry this for 2 minutes or so.

Add 1 glass/1 Cup of Water if needed.

Then add the chopped Tomatoes and Green Chillies. Let these tomatoes dissolve.

Keep this Wok aside off the stove.

Now take a separate Wok/ Deep pan. Boil Water and add Salt. Boil the Rice until they are nearly cooked. Then drain the water of the rice in a sink or basin and add cold water on the rice and drain the water again.

Now in a different Wok or Deep pan, Add one layer of the   stew and Chicken/ Beef/ Mutton, the other layer of boiled Rice, then sprinkle Coriander Leaves, Sliced Tomatoes, And Sliced Lemons. Then Again continue making 3-4 layers in the same way such that the last layer on top should be of Rice.

Cover this with a lid.

Take a Tawa and on slow flame, keep this Wok or Deep Pan on top of it. Let it be on the tawa for 10-12 minutes. Switch off the stove.

Mix the layers carefully with a dish spoon and get the yummiest, Spicy Sindhi/ Bombay Biryani ready to eat.

Serve hot with Raita.
