Baked Vegetables in White Sauce


  • Carrots= 1 cup (finely chopped in small tiny squares or thinly vertically sliced)
  • Potatoes= 2 Potatoes boiled
  • Cauliflower= 1 cup chopped
  • Peas= 1 cup optional (boiled)
  • Bell Pepper or Capsicum= 1 (chopped in small squares and stir fried in 2 tbsp Oil)
  • Yakhni Chicken Soup)= 4 sachets or 4 cups
  • Butter= 8-10 tbsp
  • Milk= 3 cups
  • White Pepper= ½ tsp
  • Black Pepper= ½ tsp
  • Maida (Flour)= 2-3 tbsp
  • Cheddar Cheese= 1 small packet grated
  • Mozrella Cheese= 1 small packet grated
  • Salt= to taste
  • Bread Slices= 8



Time Required= 40-45 minutes

Serves= 4-5 people



Chop all the vegetables except Peas and Potatoes.

Peel the boiled Potatoes and Cube them into small pieces.

Take a sauce pan. Melt 2-3 tbsp of butter on a medium flame and add Maida (flour) to it while constant stirring with a spoon. Stir for 2 minutes.

Then add 2 cups of Milk while constant stirring. Make sure you don’t get any clumps and the flour with butter dissolves easily.

Add Salt, Black Pepper and White Pepper. Add Yakhni (Chicken Soup). Stir for 2 minutes. Then add 3 tbsp of grated Cheddar Cheese. Mix well.

Now add all the vegetables and cook for further 2-3 minutes.

Add the remaining 1 cup of Milk and bring to boil. Cook for 3-4 minutes. Make sure this Sauce starts to thicken.

As soon as this White Sauce starts slightly thickening, remove the sauce pan from the stove.

Let it cool for 30-40 minutes.

Take a baking pan or a baking dish. Grease it with Oil then pour half of the White Sauce with Vegetables mixture. Spread this mixture evenly.

Now take the Bread Slices and put Butter over them

Crumble the buttered Bread Slices and spread half of these crumbled Bread Slices over the White Sauce mixture in the baking dish.

Now again pour the White Sauce Mixture over these crumbled Bread Slices.

Again spread the remaining half of the Crumbled Buttered Bread Slices over the White Sauce Mixture making layers.

Sprinkle grated Mozzarella Cheese and grated Cheddar Cheese on top.

Bake in a pre-heated Oven for 25-30 minutes. Make sure it turns Golden-brown on top and the Cheese Melts.

Serve hot.
