How to Cook Biryani

Making biryani is not so difficult. Just follow the simple steps I will mention below & you will make something worth eating & delicious. Also remain conscious regarding ingredients to make biryani as we will be preparing it with custom ingredients & masalas not with packets available in markets.

Biryani is basically a desi rice based food which is made up of rice, ghee, spices, fish, meat, potatoes & other vegetables. Biryani can be made in different styles & tastes. Famous Types of biryani are:

Hyderabadi biryani, Lucknowi biryani, Sindhi biryani, Buhari biryani, Bombay Biryani, Kacchi biryani, Mutton biryani, Chicken biryani, Egg biryani, Fish biryani, Daal biryani

Ingredients:

  • Basmati Rice (Quantity: 1 kg, Washed & soaked)
  • Desi ghee (3 table spoon)
  •  Carrot (Quantity: 1, diced)
  • Almond (100g)
  • Yogurt (Quantity: 1/2 cup)
  • Lemon (quantity: 2)
  • Tomatoes (500g, half portion is diced and the other is sliced thinly)
  • Green Chilies (Quantity:7, sliced)
  • Fresh Ginger (quantity: 3 inches)
  • Cooking Oil (3 / 4 cup)
  • Chinese parsley, Scallion, fresh coriander leaves & fresh mint (Quantity: 1/2 cup each)
  • 1 Full Chicken (Cut into 12 pieces)
  • Garlic (quantity: 2)

Spices to add:

  • Briyani Powder Mix (1 Table spoon)
  • Coriander Powder (2 Table spoon)
  • Chili Powder (1 Table spoon)
  • anise Powder (1/2 Table spoon)
  • Cumin Powder (1 Table spoon)
  • Cloves, Star Anise, Cardamom (1 Table spoon)
  • Cinnamon Stick (Quantity: 2)
  • Dried Indian Bay leaves (6 pieces)

Method:

Preparing the rice

  • Boil 4 Litre water & pour rice in it. Now cook for about 10 minutes & on boiling add spices into it.
  • Sprinkle salt in it & squeeze a lemon to keep the rice separated.
  • When rice become fluffy strain & set them.

Preparing the Chicken & ingredients

  • Start heating cooking oil in the wok
  • Golden brown the onion through cooking
  • Empty the wok into a bowl for later user.
  • Now cook the grounded spice & powder spices together till sweet-smelling.
  • Add chicken pieces & tomato slices in it.
  • Add treated garlic & ginger when chicken is half cooked.
  • Mix well & add half cup of yogurt in it.
  • Mix it again.

 Layering

  • Separate half on the chicken from wok & layered the remaining with rice.
  • Now Put one layer of sliced tomatoes & browned onions on it.
  • Put layer of half remaining chicken & then rice.
  • Put the remaining fried onions & sliced tomatoes in it.
  • Now Sprinkle melted ghee & saffron.
  • Cover the wok & cook it for 20 minutes on very slow fire.
  • Fluff the rice
  • Serve it with Achaar & Raita.
